It has been widely believed that since as far back as about half a million years ago, tea leaves have already been cultivated and consumed in many regions particularly in the areas of China and India. The people at that time consumed tea leaves steeped in boiling water. Today, hundreds of millions of people drink tea all over the world.
There are primarily 3 main varieties of tea, they are; green, black, and oolong. As all the teas came from the same species of tea tree, the only difference lies mainly in the way the tea leaves are processed. Green tea in particular is made from unfermented leaves and as such, contains the highest concentration of polyphenols - a powerful antioxidant. Typically, there are four primary polyphenols in green tea. These polyphenols are often collectively known as catechins.
Catechins have been known to fight viruses, slow the aging process, and have many beneficial effects on health. Studies have shown that catechins are able to destroy free radicals and have far reaching positive effects on health. Free radicals occurs naturally in the body but environmental toxins such as cigarette smoke, air pollution, radiation and ultraviolet rays from the sun could also give rise to these damaging particles. They are highly reactive molecules and fragments of molecules that can cause damage to our cells making us prone to many diseases and cancer.
Studies have been conducted in two areas known as Uji and Shizuoka in Japan, where most of the Japanese green teas are harvested. Residents in these two areas drink more green tea (in per capita terms) as compared to other regions in Japan. The studies have found that the cancer rates in these two areas are among the lowest in the world.
